1 1/2 tbsp olive oil
1 lb chicken breast, cut into 1-inch pieces
1 lb asparagus, trimmed and cut into 2-inch pieces
1 lemon, juiced and zested
1/2 tsp salt
1/4 tsp black pepper
3/4 cup leeks, sliced (white and light green parts only)
5 garlic cloves, minced
1 1/2 tbsp extra virgin olive oil
1/4 tsp crushed red pepper flakes
1 1/2 cups orzo
3 cups low-sodium chicken broth
3/4 cup water
5.2 oz Boursin Garlic & Fine Herbs cheese
2 tbsp fresh lemon juice
1/3 cup fresh parsley, chopped

Instructions

Heat 1 1/2 tbsp olive oil in a large skillet over medium-high heat.
Add chicken pieces to the skillet and season with salt and pepper, cooking until golden brown and cooked through; remove from the pan and set aside.
In the same skillet, add the remaining 1 1/2 tbsp olive oil, sliced leeks, minced garlic, and red pepper flakes; sauté until softened and fragrant.
Add the orzo to the skillet, stirring to toast slightly for 1-2 minutes.
Pour in the chicken broth and water, bringing the mixture to a simmer.
Cook the orzo for about 8-10 minutes, stirring occasionally, until the liquid is mostly absorbed and the orzo is al dente.
Stir in the Boursin cheese until melted and creamy.
Fold in the cooked chicken, asparagus pieces, lemon juice, and lemon zest; cook for 3-5 minutes until the asparagus is tender-crisp.
Remove from heat, stir in fresh parsley, and serve immediately.

Notes

Ensure the orzo does not overcook; it should retain a slight bite. If the sauce becomes too thick, add a small splash of broth or water to reach desired consistency. You can substitute baby spinach for asparagus if preferred.
