A bold, family-friendly fusion of burger and taco flavors. Crispy smash burger patties are layered with American cheese, crispy lettuce, tangy pickle chips, and a zesty special sauce, all wrapped in warm flour tortillas. Quick, easy, and irresistibly satisfying.
1 pound ground beef (80/20)
8 small flour tortillas
1 teaspoon kosher salt
½ teaspoon black pepper
8 slices American cheese
¾ cup shredded iceberg lettuce
½ cup dill pickle chips
¼ cup finely chopped white onion
1 tablespoon neutral oil
¾ cup mayonnaise
3 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons sweet pickle relish
1 teaspoon white vinegar
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
Heat a large skillet over medium-high heat. Add oil and let it get hot.
Using a meat press, form the beef into 8 thin 4-inch patties (about 2 oz each). Cook in batches for 90 seconds until golden and crispy on the edges. Flip and cook another 60 seconds. Add cheese to each patty and let melt slightly.
While patties cook, prepare the special sauce: Whisk mayonnaise, ketchup, mustard, relish, vinegar, paprika, garlic powder, and onion powder until smooth.
Warm tortillas in a dry skillet or microwave. Layer each with a patty, a few lettuce, pickle chips, chopped onion, and a dollop of special sauce. Serve immediately.
For best texture, form patties as thin as possible. Use pre-cooked ground beef for convenience. Store leftovers in airtight containers for up to 2 days. Sauce can be made in advance and stored in the fridge.
