1 lb flank steak or skirt steak
1 tablespoon soy sauce
1 tablespoon peanut oil
1 tablespoon cornstarch
1/2 teaspoon baking soda (optional)
1/2 cup chicken stock
2 tablespoons Shaoxing wine or dry sherry
2 tablespoons soy sauce
1 teaspoon dark soy sauce
2 teaspoons brown sugar
1 tablespoon cornstarch
1 head broccoli cut into florets
1 tablespoon peanut oil
3 garlic cloves minced
2 teaspoons ginger minced
1. Slice beef thinly and marinate with soy sauce, oil, cornstarch and baking soda for 30 minutes.
2. Steam broccoli in a skillet with a small splash of water until bright green and slightly tender.
3. Sear the marinated beef in a hot skillet until browned.
4. Add garlic and ginger and stir briefly until fragrant.
5. Pour in the sauce and return broccoli to the pan.
6. Stir everything together until the sauce thickens and coats the beef and broccoli.
