1 pound boneless skinless chicken breast, cut into 1-2 inch cubes
1 teaspoon fine sea salt
1 teaspoon ground black pepper
1 teaspoon ancho chile powder
1/2 cup favorite BBQ Sauce, plus more for basting if grilling
16 large Bibb lettuce leaves
2 plum tomatoes, seeded and diced
4 ounces blue cheese, crumbled
1 cup green goddess dressing
Vegetable oil, as needed for pan-frying

Instructions

Combine 1 tsp sea salt, 1 tsp black pepper, and 1 tsp ancho chile powder in a bowl.
Coat chicken cubes in the seasoning mixture and add 1/2 cup BBQ sauce. Marinate for at least 10 minutes.
Heat 1-2 tbsp vegetable oil in a skillet over medium-high heat.
Cook chicken until golden and no longer pink, about 5-7 minutes. Flip and repeat.
If using, place in oven at 400°F to finish cooking for 5-10 minutes if grilling is not an option.
Arrange 4 lettuce leaves per plate.
Place pan-fried chicken, diced tomatoes, and crumbled blue cheese in each lettuce wrap.
Drizzle with green goddess dressing before serving.
