2 large eggs
2 tbsp hot sauce
4 cups cornflakes, crushed
1/4 cup parmesan cheese, grated
2 tsp paprika or smoked paprika
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp salt
1 tbsp olive oil
1/2 cup honey
1/4 cup hot sauce
3/4 tsp chili flakes (optional)
3/4 tsp chili powder (optional)
1/4 tsp salt

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, whisk together the eggs and 2 tablespoons of hot sauce.
In a separate large bowl, combine the crushed cornflakes, parmesan cheese, paprika, Italian seasoning, garlic powder, and 1 teaspoon salt.
Dip each chicken thigh into the egg mixture, then press firmly into the cornflake mixture to coat evenly.
Place the coated chicken on the prepared baking sheet and drizzle lightly with olive oil.
Bake for 25 minutes or until the chicken reaches an internal temperature of 165°F and the crust is golden brown.
While the chicken bakes, whisk together the honey, 1/4 cup hot sauce, chili flakes, chili powder, and salt in a small saucepan over low heat until combined.
Drizzle the hot honey glaze generously over the warm chicken just before serving.

Notes

Ensure you crush the cornflakes well for the best adhesion to the chicken. You can adjust the heat level by increasing or decreasing the chili flakes in the honey glaze. If you prefer, bake on a wire rack set over the baking sheet for even crispier results on the bottom.
