Tasty baked breakfast tacos with eggs, crispy potatoes, bacon, and melted cheese. Perfect make-ahead breakfast for busy mornings.

4 slices bacon

2 tbsp canola oil

4 cups potatoes cubed

2.5 tbsp taco seasoning

8 corn tortillas

8 eggs beaten

1/2 cup Monterey Jack cheese

Instructions

Step 1: Bake and chop the bacon
Preheat oven to 375°F and arrange bacon on a baking sheet in a single layer. Bake for 10 to 12 minutes until crispy then transfer to paper towels to drain. Let cool slightly and chop into small bite-sized pieces.

Heat oil in a skillet over medium heat and add cubed potatoes in an even layer. Let them cook undisturbed for a few minutes to develop a golden crust then sprinkle taco seasoning evenly and stir.
