A refreshing Apple Broccoli Salad made with crisp apples, broccoli, dried cranberries, nuts, and a tangy dressing. Perfect as a healthy side dish or light lunch.

Ingredients

4 cups broccoli florets, chopped

1 large Honeycrisp apple, diced

1/2 cup dried cranberries

1/2 cup chopped pecans or walnuts

1/4 cup red onion, finely diced

1/2 cup shredded sharp cheddar cheese (optional)

1/2 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Instructions

1. In a large bowl combine broccoli, diced apple, cranberries, nuts, red onion and cheddar cheese if using.

2. In a small bowl whisk together mayonnaise, apple cider vinegar, honey, salt and pepper.

3. Pour the dressing over the salad mixture.

4. Toss until all ingredients are evenly coated.

5. Refrigerate the salad for at least 30 minutes before serving to allow flavors to blend.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to one day.

Adjust honey depending on preferred sweetness.

Leave out cheese for a dairy-free version.
