Grilled Citrus Chicken with Glaze is juicy, bright, and packed with fresh orange, lemon, and lime flavor. The sweet citrus glaze adds a sticky finish that makes this chicken perfect for an easy family dinner or a fresh summer cookout.
Ingredients
1 ¾ lb chicken breasts
1 cup fresh orange juice
1 tbsp orange zest
1 large lemon, juiced and zested
2 large limes, juiced and zested
4 cloves garlic, minced
2 shallots, minced
½ cup olive oil
2 tbsp brown sugar
½ tsp salt
½ tsp black pepper
1 tbsp fresh rosemary
1 tbsp dried parsley
1 tsp red pepper flakes
2 tbsp honey
2 tbsp fresh parsley, finely chopped
Instructions
1. Zest and juice the orange, lemon, and limes. Add them to a mixing bowl with garlic, shallots, olive oil, brown sugar, salt, pepper, rosemary, parsley, and red pepper flakes. Mix well to make the marinade.
2. Lightly pound or butterfly the chicken breasts so they cook evenly. Place the chicken in half of the marinade and reserve the other half for the glaze. Cover and refrigerate for at least 30 minutes and up to 4 hours.
3. Preheat the grill to medium-high heat and brush the grates with oil to prevent sticking.
4. Place the marinated chicken on the grill. Cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F.
5. Pour the reserved marinade into a small saucepan, add the honey, and simmer for several minutes until slightly thickened and safe to use as a glaze.
6. Brush the citrus glaze over the chicken during the final few minutes of grilling.
7. Remove the chicken from the grill and let it rest for a few minutes before slicing.
8. Garnish with fresh parsley and serve warm.
Notes
Do not marinate the chicken longer than 4 hours because the citrus can affect the texture.
