Description

Glazed Blueberry Brownies are soft, dense, fruit-filled brownies made with real blueberry reduction and finished with a smooth vanilla glaze.


Ingredients

1½ cups blueberries, fresh or frozen (thawed)

10 tablespoons unsalted butter, melted

1¼ cups granulated sugar

2 large eggs, room temperature

½ teaspoon vanilla extract

½ teaspoon sea salt

1 cup all-purpose flour, sifted

Glaze:

1 cup powdered sugar, sifted

2 tablespoons milk

⅛ teaspoon vanilla extract

Pinch of salt


Instructions

1. Blend the blueberries until smooth.

2. Pour the blueberry puree into a saucepan on low heat and simmer, stirring gently, until reduced to about 1/2 cup. Let it cool.

3. Preheat the oven to 325°F (163°C) and line an 8×8 glass baking dish with parchment paper.

4. In a medium bowl, combine the melted butter and sugar.

5. Mix in the eggs, vanilla extract, and salt until well blended.

6. Fold in the cooled blueberry reduction.

7. Gradually add the flour, stirring until just combined.

8. Pour the batter into the prepared baking dish and spread evenly.

9. Bake for 35 to 40 minutes, until the center is set and a toothpick comes out clean or with a few crumbs.

10. Remove from the oven and let the brownies cool completely.

11. Mix the glaze ingredients until smooth and silky.

12. Spread the glaze evenly over the cooled brownies.

13. Let the glaze harden, then cut into 16 squares and store leftovers in an airtight container.


Notes

Fresh or frozen thawed blueberries both work well.

Do not overmix the batter after adding the flour.

Be careful not to overbake, since the brownies continue to bake slightly as they cool.

Add lemon juice or zest if you want a brighter flavor.

White chocolate chips are a better add-in than regular chocolate chips for this recipe.
