Description
Garlic Butter Steak Bites with Zucchini is a quick low carb dinner made with juicy steak cubes, tender zucchini, garlic, and butter in one skillet.
Ingredients
1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
1 medium zucchini, cut into half-moon slices
3 tablespoons butter
3 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley, chopped, for garnish (optional)
Instructions
1. Pat the steak cubes dry with paper towels and season with salt and black pepper.
2. Heat a skillet over medium-high heat and add olive oil.
3. Add the steak bites in a single layer and sear for 1 to 2 minutes per side until browned. Work in batches if needed, then remove and set aside.
4. Lower the heat to medium and add the butter to the same skillet.
5. Add the minced garlic and stir constantly for about 30 seconds until fragrant.
6. Add the zucchini and cook for 3 to 5 minutes until tender-crisp.
7. Return the steak bites to the skillet and toss everything together in the garlic butter sauce.
8. Cook for another 1 to 2 minutes until heated through.
9. Garnish with fresh parsley if desired and serve immediately.
Notes
Use a hot skillet for the best sear.
Do not overcrowd the pan or the steak will steam instead of brown.
Cook the zucchini just until tender-crisp to keep the best texture.
A splash of broth or water can help when reheating leftovers.
