Description
Chipotle Sauce Meatballs are juicy Mexican-style meatballs simmered in a smoky chipotle-tomato salsa. Perfect for family dinners, bold in flavor.
Ingredients
1 slice sandwich bread
2 tablespoons milk
1 pound ground beef (85/15%)
1 whole egg
1 garlic clove, chopped or ½ tsp garlic powder
Salt and pepper to taste
Optional: cheese cubes or boiled egg pieces
For the Sauce:
1 ½ tablespoons vegetable oil
¼ cup white onion, chopped
2 garlic cloves, minced
3 large tomatoes, chopped (22 oz)
1–2 canned chipotle peppers in adobo sauce
½ cup chicken broth or water
Salt and pepper to taste
Chopped parsley or cilantro for garnish
Instructions
1. Soak bread in milk and mash until smooth.
2. Add ground beef, egg, garlic, salt, and pepper. Mix well.
3. Form into 1½-inch meatballs. Stuff with cheese or egg if desired.
4. Blend tomatoes and chipotle peppers until smooth.
5. Sauté onion in oil for 5 minutes. Add garlic and cook 3 more minutes.
6. Pour in sauce and simmer 5 minutes. Add broth if needed.
7. Add meatballs to the sauce, cover, and cook for 10 minutes.
8. Uncover and simmer 10 more minutes. Remove meatballs if reducing sauce.
9. Serve with rice or tortillas and garnish with cilantro.
Notes
Use one chipotle for mild spice, two for medium heat.
Freeze leftovers with sauce up to 2 months.
Great with mashed potatoes or in tortas.
