Description

Blueberry Pie Biscuits are soft, fluffy biscuits baked with sweet blueberry filling and finished with a simple glaze. An easy one-pan dessert perfect for breakfast or brunch.


Ingredients

2 ¼ cups gluten free 1:1 flour

8 tbsp cold butter

1 ¼ tsp kosher salt

½ cup sugar

¼ tsp cinnamon

½ tsp baking soda

1 tbsp baking powder

1 cup buttermilk

21 oz blueberry pie filling

Glaze:

2 tsp lemon juice or milk

1 ½ cups powdered sugar


Instructions

1. Preheat oven to 450°F and grease a baking dish.

2. Mix flour, salt, sugar, cinnamon, baking soda, and baking powder.

3. Cut in cold butter until crumbly.

4. Add buttermilk and mix until just combined.

5. Freeze dough for 20 minutes.

6. Shape into 6 biscuits and place in pan.

7. Top with blueberry pie filling.

8. Bake for 20 minutes until golden.

9. Mix glaze ingredients until smooth.

10. Drizzle glaze over warm biscuits and serve.


Notes

Do not overmix dough to keep biscuits soft.

Use cold butter for best texture.

Try other fruit fillings like cherry or apple.

Serve warm for best flavor.
