Ingredients
4 boneless skinless chicken breasts
salt and black pepper to taste
2 tablespoons olive oil
1/4 cup balsamic vinegar
1 tablespoon honey or maple syrup
1 teaspoon dried basil
1 teaspoon dried oregano
2 cloves garlic minced
1 cup cherry tomatoes halved
1 cup shredded mozzarella cheese
fresh basil or parsley optional
Instructions
Step 1: Preheat the oven
Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil to prevent sticking and help the chicken develop a golden finish.
